Baby back ribs with smokey BBQ sauce 


Ingredients

3 racks pork back ribs

2 cups of prepared barbecue sauce

BBQ sauce

2 cups ketchup

1 small onion, finely chopped

1 tablespoon garlic, finely chopped

4 cups water

1 cup cider vinegar

2 tablespoons paprika

1 tablespoon honey

¼ cup dark brown sugar

¼ cup chili powder

¼ cup lemon juice

3 tablespoons Worcestershire sauce

4 teaspoons liquid smoke

Sea salt and cracked black pepper, to taste


Prepare sauce beforehand to chill overnight.

To make sauce, combine all ingredients in stock pot over medium heat and bring to slow boil, stirring occasionally, about 30 minutes. Remove from heat and strain to remove onion and garlic. Cool to room temperature and chill in the refrigerator overnight. Preheat oven to 300°.

Cut racks into thirds; place baking sheet and bake covered for 1 ½ hours. Remove from oven and brush liberally with BBQ sauce; bake covered for another ½ hour or until tender.

Remove from oven and transfer to outdoor grill, preheated to medium-high heat. Brush liberally with more BBQ sauce and grill for about 5-7 minutes or until sauce caramelizes slightly. Remove from grill and serve immediately. Serves 4–6.
