Grilled lemon pork loin gyro with yogurt sauce

The gyro is so delicious and here created with easy to make pork roast, it will surely be a winner for lunch or dinner.


Ingredients

1 ½ pounds boneless pork loin, cubed

⅓ cup each extra-virgin olive oil

⅓ cup lemon juice

¼ cup red wine vinegar

2 cloves garlic, minced

2 tablespoons dried oregano

1 tablespoon chopped fresh thyme

1 teaspoon ground cumin

1 teaspoon sea salt

1 tablespoon sugar

¼ teaspoon freshly ground pepper

Tzatziki sauce

1 ½ cups Greek-style yogurt

1 tablespoon extra-virgin olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

2 tablespoons chopped fresh dill

½ teaspoon sea salt

to serve

4 large Greek style pitas

Butter lettuce

6 cherry tomatoes, halved

Small red onion, sliced

Dried oregano, to garnish



Preparation

For yogurt sauce, combine all ingredients. Cover and chill.

For pork, in large bowl, combine all ingredients. Toss well; cover and refrigerate overnight.

To cook, remove pork from marinade and sear in cast iron skillet over medium-high, for 8 - 10 minutes, turning frequently. Do not overcook, pork is cooked when juices run clear. Remove skillet from heat and allow pork to rest in skillet.

To serve, warm pitas (keeping them soft), and layer each layer with pork, tzatziki sauce, lettuce, tomatoes and red onion. Garnish with oregano. Makes 4.
