Oatmeal Cookies With Coconut And Sour Cherries

These cookies are hands down the most delectable morsels of tarty sweetness! These gems are a must-try!


Ingredients

1 cup unsalted butter, room temperature

¾ cup sugar

½ cup firmly packed brown sugar

2 eggs

1 tablespoon vanilla

2 cups all-purpose flour

2 teaspoons baking soda

½ teaspoon salt

2 cups quick oats

½ cup sweetened shredded coconut

2 cups dried sour cherries

Preparation

Preheat oven to 350°F.

In stand mixer, beat butter with sugars until smooth. Add eggs and beat until light and fluffy, about 3 minutes. Blend in vanilla.

In another bowl, combine flour, baking soda and salt. Add to butter mixture until blended. Mix in oats, coconut and cherries until well combined.

Form into balls and place onto parchment-lined baking sheet. Bake for 15 to 20 minutes or until lightly golden; remove from oven and let cool in pan 5 minutes.

Sour cherries are available in specialty food stores and are well worth the price.
