Vegetable Pad Thai


A classic Thai dish made with rice noodles, veggies, and a tangy and sweet sauce made with lime and tamari.


Ingredients

8 oz. rice noodles

- 2 tbsp. sesame oil

- 1/2 onion, chopped

- 3 cloves garlic, minced

- 1 red bell pepper, chopped

- 1 cup sliced mushrooms

- 1 cup shredded carrots

- 1/2 cup chopped scallions

- 1/2 cup chopped cilantro

- 1/4 cup chopped roasted peanuts

- 1/4 cup tamari or soy sauce

- 2 tbsp. maple syrup

- 2 tbsp. rice vinegar

- 2 tbsp. fresh lime juice

- 1 tbsp. chili paste

- Salt to taste


Preparation

1. Cook rice noodles according to package directions. Drain and set aside.

2. In a large skillet, heat sesame oil over medium heat. Add onion and garlic and sauté until onion is translucent.

3. Add red bell pepper, mushrooms, and shredded carrots. Sauté for another 5-7 minutes, until vegetables are tender.

4. In a small bowl, whisk together tamari or soy sauce, maple syrup, rice vinegar, lime juice, and chili paste. Pour into the skillet with the vegetables and stir well to combine.

5. Add cooked rice noodles to the skillet and toss to coat with the sauce.

6. Serve garnished with chopped scallions, cilantro, and roasted peanuts.
